INGREDIENTS:
4 cups teff flour (optional: use instead 2 cups teff with 2 cups of all purpose flour of your choice for a more subtle flavor)
2 tbsp baking powder
1 tsp sea salt
4 tbsp avocado oil
4 cups almond milk
2 tbsp vanilla extract
3 tbsp maple syrup
DIRECTIONS:
Preheat griddle over medium heat.
Combine almond milk, vanilla extract, oil, syrup, baking powder and salt in blender and mix well.
Add in teff flour and mix until well combined.
Pour 1/8-1/4 cup of batter onto griddle for one pancake.
Flip pancakes when bubbles begin to form on top of pancake and bottoms are golden brown.
Freeze leftovers for a healthy grab-and-go breakfast.
Makes 8-12 pancakes.
